This Sunday, February 27, 2022, she invites you to make one Indian style Aloo Gobi.
Cauliflower is one of those vegetables that are excellent for health but not always appreciated. But prepared “Indian curry style” it reveals its potential! If every family has their recipe for “Aloo Gobi”, two ingredients never change: potato (aloo) and cauliflower (gobi).
You will need for 4-6 people: 4 medium potatoes, 3 tbsp vegetable oil, 1/2 cauliflower, 1 onion, 2 cloves of garlic, 1 tbsp cumin, 1 tsp coriander seeds, 1 tsp mustard seeds, 3 cm fresh turmeric, 2 cm fresh ginger, 1 tsp tomato puree, 250 ml water and salt.
Prepare the vegetables: detail and wash the cauliflower florets, then peel and cut the potatoes into large chunks. Peel and chop onion and garlic. Wash and finely grate the ginger and turmeric.
Pour the oil into a deep wok pan and heat the spices (mustard, cumin and coriander). You can lightly grind them in a mortar beforehand. Add the onion and sauté for 2 to 3 minutes. Then add the garlic, ginger and turmeric and finally the tomato puree. Mix well.
Add the potatoes and cauliflower to the pan and brush the vegetables with the spice mixture. Top up with water and cook under the lid for 20 to 30 minutes. Mix between 2 to 3 times.
Season with salt. Scatter over the coriander leaves and enjoy!
